We have been growing our own Swiss Chard here
at our New Hampshire farm in a zone 4 to 5. It is also an excellent and
popular farm product at the local farmers' markets but must be picked
that very day and kept in coolers before selling.
The 6-9 inch leaves are steamed and used like spinach or they can be
eaten raw in salads or sandwiches when young and tender. We like to
steam lightly and add a vinaigrette dressing!
Swiss chard is a biennial plant which produces seed heads in its
second year. It must be protected from the cold and over-wintered with a
thick mulch if you plan to grow your own seeds. In the first year it
produces leaves which keep growing all season long and as long as you
keep picking them it will keep producing!
